Grilled Mahi-Mahi with Roasted Pepper Sauce
Ingredients
1 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. grated lemon peel
1 T. olive oil
4 Bay Prime Mahi Mahi fillets
1 C. bottled roasted peppers
1 clove garlic
1 T. chili-garlic oil
Instructions
1 Combine the paprika, salt and pepper, lemon peel and olive oil to make a fragrant paste. Generously rub the paste into the Mahi-Mahi fillets and grill them on medium-high about 3 minutes per side.
2 Meanwhile, combine the remaining ingredients in a food processor and pulse until a smooth sauce is formed. Spoon the sauce over the hot fillets and serve with a crisp green salad. Serves 4.
