1 C. Bay Prime Calamari
2 tsp. oregano
1/2 C. garlic butter
1 C. chopped tomatoes
Salt and pepper to taste
Tabasco and Worcestershire sauce mixed together to taste
6 oz. demi-glaze or rich fish stock
6 oz. Parmigiano Reggiano cheese
2 oz. olive oil
3/4 C. parsley, chopped
1 In a very hot pan, heat olive oil. Add calamari and stir. Add oregano, garlic butter, tomatoes, salt, tabasco and Worcestershire mix, demi-glaze and cheese. Cook until done, approximately 3 minutes.
2 Remove with spoon and place in a bowl, garnish with chopped parsley. Serves 1.
