Broiled Cod with Herbed Tomato, Garlic and Lemon Sauce
Ingredients
2 tomatoes (1 lb.) peeled, seeded and chopped
2 T. olive oil
1 T. fresh lemon juice
1 lg. garlic clove minced
1/4 tsp. salt
1/2 C. mixed fresh herbs, including chives, tarragon and parsley
3 Bay Prime Cod Fillets
2 T. butter
Instructions
1 Stir together tomatoes, olive oil, lemon juice, garlic and salt. Let stand at room temperature for 2 hours to allow flavors to blend.
2 In a saucepan, over medium heat, melt butter and heat until it is just brown. Place fish on greased broiling pan and brush with browned butter. Broil 4-6 inches from heat for 8-10 minutes. Do not turn. Serves 3.
